Indo-Chinese cuisine has taken the Indian food market by storm. Primarily developed in the busy Kolkata streets by the Chinese immigrant community, the cuisine took hold of the street food market within a few months, and everyone came to adore this new style of cooking. And Schezwan fried rice is one of the most popular Indo-Chinese dishes.

A quick history of Schezwan Fried Rice Recipe:

Originated from the Sichuan province of China, the original Schezwan Fried Rice Recipe uses Sichuan peppers that have a lemony taste. In contrast, in India, the Schezwan sauce is made using red chilies, garlic, and vinegar.

The recipe of Schezwan fried rice is super simple, which includes a quick stir-toss-fry of the rice with a choice of vegetables and Schezwan sauce. You can either make the schezwan sauce at home or buy a ready-made schezwan chutney or schezwan sauce from your local store.  A twist to the traditional veg fried rice recipe, the Schezwan fried rice is served with Manchurian gravy or chili paneer.

Schezwan fried rice is a very easy recipe. To make this recipe, I have used chings schezwan chutney. Chings schezwan chutney is my personal favorite because it has a unique taste which makes each and every recipe more yummy and delicious. I have tried schezwan chutney of other brands but Chings is the only one that I found very suitable for any Indo Chinese dishes.

Veg Schezwan Fried Rice Recipe | Kid Friendly Schezwan Fried Rice

To make this schezwan fried rice, you would need,

  • Rice
  • Diced vegetables
  • Spring onion
  • Salt
  • Garlic
  • Ginger
  • Vinegar
  • Red chilli sauce
  • Soy sauce
  • Oil
  • Ajinomoto (Optional)
  • Schezwan sauce/ Schezwan chutney

– Take a bowl, add ½ Cup of rice and rinse properly for 3 to 4 times. Then soak the rice for 10 to 15 minutes.

– Drain the water, and bring it to boil in an open pan. Don’t cook the rice completely. Leave 20% uncooked. After the rice is cooked, remove it on a plate and let it cool.

– In a cutting board, dice all the vegetables and keep them aside.

– Take a kadhai, add 2 Tbsp oil. Add chopped Ginger and Garlic and saute them for a minute or two. You can also add ginger garlic paste.

– Then add all the veggies and spring onions (white part). Saute them till they are half cooked. Now, add ½ Tsp Vinegar, ½ Tsp Red Chili Sauce, and ½ Tsp Soy Sauce and saute it well.

– Add rice and mix them well sp that the rice grains are coated with the sauces evenly.

– Add salt, 2 Tbsp Schezwan Chutney, and ¼ Tsp Ajinomoto to the rice and toss them well.

– Your vegetable schezwan fried rice recipe is ready. Serve in a plate and garnish it with the green part of spring onions.

Ingredients
  

  • ½ cup Rice
  • 2 ½ cup Vegetables (Carrot, Beans, Cabbage, Bell Peppers) diced
  • 2 stalks Spring Onions (Green and White Separated) chopped
  • 3 cloves Garlic chopped
  • ½ tsp Vinegar
  • ½ tsp Red Chili Sauce
  • ½ tsp Soy Sauce
  • ¼ tsp Ajinomoto (Optional)
  • ½ tsp Ginger chopped
  • 2 tbsp Schezwan Chutney
  • Salt as per need
  • 2 tbsp Oil

Instructions

Notes

  • You can increase or decrease the quantity of oil used.
  • Add your own choices of veggies you like.
  • Instead of chopped Garlic and ginger, you can also add 1 Tsp Ginger Garlic paste.
  • Adding Ajinomoto is very much optional. It is used to add a little more taste.
  • Cool the rice completely before starting the recipe.
