Maddur Vada Recipe – How To Make Maddur Vada?

What’s Cooking India? Today it is authentic Maddur Vada Recipe. It is also known as Maddur Vade, a fried breakfast or tea time snack. The name Maddur because it originates from Maddur (a town between Bangalore and Mysore). Maddur is in the Mandya district of Karnataka.
It is made up of coconut, curry leaves, all-purpose flour, rice flour, semolina and onions. all these are mixed together with a small amount of hot oil, then shaped into a patty and then deep fried. It doesn’t take much time to cook. It tastes very good if you make it crispy. To make it crispy, you will just have to fry the vada until it is light brown. So without wasting any more time, lets start our recipe.

Steps to make Maddur Vada Recipe
How to make Maddur Vada Dough?
Step 1: Take a medium bowl.
Step 2: Add a ½ cup of rice flour.
Step 3: Then add ¼ cup fine semolina(Rava) and ¼ cup all-purpose flour (Maida) and mix well.
Step 4: Now, add 1 to 2 Green Chillies finely chopped, ½ cup Onion, and also add 5 to 8 Curry leaves and 3 tbsp Parsley along with salt according to your taste.
Step 5: Now, mix it well with a ladle and keep it aside.
Step 6: Now, heat 1 tbsp of oil and pour it in the mixture.
Step 7: Mix well with a ladle again until the oil is mixed with the mixture.
Step 8: Now, add 4 tbsp of water in parts and keep mixing the mixture until it forms a dough. The dough should be soft like a Chapati dough. If the dough becomes too thin, then add some all-purpose flour in it. Your Maddur vada dough is ready.
How to fry the Maddur Vada?
Step 1: Take a deep frying pan or a Kadhai. Add oil and fill it till the middle of the vessel and bring it to heat on a medium flame.
Step 2: Now, take a small size of the dough, and make a shape of a patty or an oval ball.
Step 3: Using your fingers, press the patty to make it thin. The patty size should be 0.5 cm thick.
Step 4: Add the patty in the hot oil slowly from the side.
Step 5: Fry both the sides by flipping it occasionally. But let one side fry properly then flip it.
Step 6: Your vadas will turn brown once it is cooked properly. As soon as it is brown, remove it in a paper towel and serve with coconut chutney.
Your Maddur Vada is ready to be served.
Tips for a Perfect Maddur vada
- You can add ½ tsp chopped ginger if you wish to with the onions.
- Instead of 1 tbsp of oil, you can use Ghee.
- You can use medium size Rava instead of fine rava for authentic Maddur vada recipe.
- Do not keep the dough for a longer time. As soon as the dough is ready, fry them.
- You can also add 2 tbsp grated coconut.
- For an authentic Maddur Vada, keep the vada thin and crispy.
