Kuzhi paniyaram recipe is a popular South Indian breakfast recipe made with leftover idli or dosa batter. There is an instant version available, in which rava (semolina) is used. Paniyarams are round mini dumplings, with crispy from outside and soft from inside. If you have leftover idli or dosa batter, then you can add some veggies, some spices, and make quick paniyarams.

In this recipe, I have used only carrot and onions, but you can use any veggies you like. You can also add capsicum, french beans, green moong, etc. I especially make use of sprouted pulses like green moong, boiled mashed chickpeas, etc.

There are special pans for paniyarams or appe. These are called as appe pans. Traditionally these pans are made up of cast iron and are very heavy in weight. But, new modern pans are non-stick and lightweight. These pans are also called as Aebleskiver pan. Paniyarams are also called as appe. Serve this kuzhi paniyaram recipe immediately when hot along with coconut chutney to tomato chutney.

Kuzhi Paniyaram Recipe | Kuli Paniyaram

To make this bread pakora recipe, you would need,

  • Onion
  • Carrot
  • Curry Leaves
  • Green Chili
  • Mustard Seeds
  • Coriander Leaves
  • Idli Batter
  • Oil
  • Salt

– Take a large frying pan. Add 1 tbsp oil and switch on the flame on medium. Add mustard seeds and let them crackle. Then, add the curry leaves and saute them for a few seconds.

– Next, add all the other finely chopped vegetables (Onion, Carrot, and Chilies) and saute it for 2 to 3 minutes or until the onions turn slightly translucent. Add the chopped coriander leaves and saute for a minute.

– Now, switch off the flame and let the veggies cool down a bit. Take the idli batter. It should be in Medium consistency. If it is too thin, then add little rice flour, and if the batter is thick, then add a little water and mix it properly.

– Grease the Paniyaram pan with oil. Fill each ¾ molds with the idli batter. Keep the flame on low, cover it with a lid and cook them for 2 to 3 Minutes.

– Now, using a small spoon, flip 1 Paniyaram and check if the base has turned a slight golden color. If it is, then flip all the other paniyaram and cook until golden in color.

– Your Paniyaram recipe is ready to be served. Serve it with coconut Chutney.

Ingredients
  

  • 1 large Onion finely chopped
  • 2 tbsp Carrot finely chopped
  • 8 Curry Leaves
  • 2 Green Chili finely chopped
  • 1 tsp Mustard Seeds
  • 3 tbsp Coriander Leaves
  • 2 cups Idli Batter
  • Oil as per need
  • Salt as per need

Instructions

  • Your Paniyaram recipe is ready to be served. Serve it with coconut Chutney.

Notes

  • To check if Paniyaram has cooked or not, then using a knife, poke inside one Paniyaram. If nothing sticks to the knife, then your paniyaram is cooked properly. If the batter sticks, then you need to cook it for some more time.
  • You can directly add the vegetables without tempering. Tempering removes the raw taste from the veggies.
  • You can add vegetables of your own like peas, capsicum, etc.
  • Cook the paniyaram on low flame to cook it evenly and properly.
  • You can also add coconut with the veggies.
