Khaman ki Recipe | Easy Tasty Dhokla at Home in 20 Minutes

This khaman ki recipe or homemade khaman dhokla is a very famous street food originated from Gujarat. A khaman is a Gujarati street snack made by steaming gram flour. Some other spices like green chili paste, ginger paste, oil, salt are also added with the gram flour.

Making a khaman dhokla recipe or Gujarati dhokla recipe is very easy. Just mix all the ingredients together and steam them. If you are very hungry and don’t have anything with you, then you can definitely go for this recipe. A dhokla is not just limited to gram flour. New variations were added overtime like rava dhokla, rice dhokla, mixed dal dhokla, etc.

Homemade Khaman ki Recipe | Dhokla Recipe

To make this Khaman ki recipe, you would need,

  • Besan (Gram Flour)
  • Sugar
  • Green Chilli
  • Lemon Juice
  • Curry Leaf
  • Mustard Seed
  • ENO (Fruit Salt)
  • Coriander Leaves
  • Oil

– Take a large bowl. Add the besan, sugar, salt, lemon juice in it. Mix it for 5 minutes so that all the ingredients are mixed properly. Now add water parts by parts and make a thick paste.

– Whisk them for at least 5 to 6 minutes. Then add 2 tbsp hot oil and give another good stir. In a large open vessel or a cooker, add a small amount of water.

– Place a small cooking ring or a small bowl inside the vessel or the cooker and bring it to boil. Take a flat plate, grease it with oil on the upper side in which the batter will be added.

– Now, add ½ tsp ENO Fruit Salt into the batter, and mix well again immediately. You will see that your batter might have grown up.

– Add the batter immediately into the oil greased plate. Place that plate inside the cooker or the vessel and steam it for 5 to 10 minutes on medium flame.

– If you are using a cooker, then remove the whistle and steam it. After 10 minutes, prick a toothpich into the dhokla. If it comes out clean, then your dhokla is ready. When it is done, remove the plate, and cut it into 1 sq inch pieces.

– In a cooking pan, take 2 tbsp oil. In the meanwhile, in a small bowl, dissolve 2 tbsp of sugar. into 200 ml of water.

– Now, put 2 tsp mustard seeds, 5 to 6 curry leaves, 1 tsp finely coriander leaves, 1 tsp salt, and finely chopped green chilies into the pan.

– Saute it for a minute and then spill it over the dhokla. Your khaman dhokla is ready.

Dhokla Banane Ki Recipe

Ingredients
  

  • 250 grams Besan (Gram Flour)
  • 3 tbsp Sugar
  • 2 Green Chilli finely chopped
  • 1 tbsp Lemon Juice
  • 6 Curry Leaf
  • 2 tsp Mustard Seed
  • ½ tsp ENO (Fruit Salt)
  • 2 tbsp Coriander Leaves
  • 4 tbsp Oil

Instructions

How to Steam Your Khaman

  • In a large open vessel or a cooker, add a small amount of water.
  • Place a small cooking ring or a small bowl inside the vessel or the cooker and bring it to boil.

How to Temper your Dhokla

  • Your khaman dhokla is ready.

Notes

  • The consistency of the Dhokla batter should be perfect which is the key for a soft spongy Khaman Dhokla.
  • Beat the batter as much you want. This is because, the more you whisk, the more bubbles will be formed in the batter which makes the Dhokla soft.
  • After you put the batter in the baking tray, don’t pat it to set the batter. Because doing this will make the bubbles burst which in turn will make your Dhokla less spongy.
  • You can use ¼ tsp baking soda instead of ENO.
