Kerala Puttu Recipe – How to Make Soft Easy Puttu Recipe

Kerala puttu recipe or steam cake Kerala is a most popular South Indian breakfast made with a combination of rice flour and freshly grated coconut. Traditionally, puttu was made in bamboo logs, but, now people use a unique steamer/vessel made specially for puttu recipe which is called puttu kudam.

A puttu kudam has 2 parts lower and upper. The lower part consists of boiling water and the upper part contains the puttu itself. Puttu is considered as the healthiest breakfast recipe, as it is prepared by steaming. It is relatively a fast and quick breakfast recipe that requires very less time.
Puttu is normally served with black chickpeas curry which is also known as kerala kadala curry. This combination is a traditional combination and tastes super delicious together. To make this puttu, you can either use storebought puttu powder or you can make it at home very easily. Homemade puttu powder can be kept stored for many several days.
I remembered, when I was small, like in my school, there was my friend who is a Keralite. He used to bring Puttu in his lunch box for at least 3 to 4 days a week. I didn’t know the name of this recipe back at that time. I was small, I just knew that it is made up of coconut and rice, and these are the 2 ingredients which I love the most when combined together.
I had asked him many times but he too didn’t know the name. It is just in recent times that I came to know that the lunchbox recipe that I loved the most back at that time is called as kerala puttu recipe. As soon as I came to know, I immediately rushed to a nearby kitchen store and bought the puttu kudam.
I made this puttu kerala dish on that day and it turned out to be exactly the same that I had during my school times.

Kerala Puttu Recipe | Homemade Easy Puttu Recipe
To make this Puttu recipe, you would need,
- Puttu Flour
- Water
- Salt
- Fresh Grated Coconut
– Take the puttu flour on a large plate. Add ¼ teaspoon of salt and ¾ cup of water into the flour and mix them well.
– After mixing is done, you might notice that, if you hold little flour in between your palms and fold it, then the flour will form a shape. If you press the flour will break its shape. Make sure that there are no big lumps are left in the flour.
– Take the Puttu Kudam and fill the lower part of the vessel with 2 cups of water. Place it on the stove and let it boil.
– Now in the upper part, place the flat disk on the bottom, and then add 2 tbsp of grated coconut, and then add another layer of 3 tbsp puttu flour.
– Repeat this process again. Add 2 tbsp of grated coconut, and then add another layer of 3 tbsp puttu flour will the cylinder is filled completely. Remember that the base and the top side of the puttu should contain a layer of grated coconut.
– Cover it with the lid provided with the Puttu Vessel and place the cylinder on the lower part of the kudam. Let it steam for 10 Minutes.
– Remove the upper side from the vessel and with the help of a stick, push the filling from the lower side of the cylinder slowly and carefully into a plate.
– Your puttu recipe is ready.

How to Make Puttu Kerala Dish?
Ingredients
- 2 cup Puttu Flour
- Water as needed
- ¼ tsp Salt
- 1 cup Fresh Grated Coconut
Instructions
- Take the puttu flour on a large plate.
- Add ¼ teaspoon of salt and ¾ cup of water into the flour and mix them well.
- After mixing is done, you might notice that, if you hold little flour in between your palms and fold it, then the flour will form a shape. If you press the flour will break its shape.

How to Steam the Puttu?
- Take the Puttu Kudam and fill the lower part of the vessel with 2 cups of water. Place it on the stove and let it boil.
- Now in the upper part, place the flat disk on the bottom, and then add 2 tbsp of grated coconut, and then add another layer of 3 tbsp puttu flour.
- Repeat this process again. Add 2 tbsp of grated coconut, and then add another layer of 3 tbsp puttu flour will the cylinder is filled completely. Remember that the base and the top side of the puttu should contain a layer of grated coconut.
- Cover it with the lid provided with the Puttu Vessel and place the cylinder on the lower part of the kudam. Let it steam for 10 Minutes.

- Your puttu recipe is ready.
Notes
- Puttu can be not only be prepared in the Puttu Kudam vessel., but in idli molds as well.
- You can place the upper part of kudam wither to the lower part of the same vessel or on a top of the cooker whistle.
- A special dish, puttu kadala is normally served with puttu.
