A good tip to follow while making this murgh masala is, cook the whole recipe in low flame. It helps keep the chicken pieces juicy and flavourful.
Also, adding coconut milk or hot water in the recipe helps to enhance the flavor. To make a gravy, you can add grated coconut paste and cashew nuts paste.

Tomato Puree | ½ Cup |
Chicken Masala | ½ Tsp |
Curry leaves | 3 Tbsp |

Steps to make Chicken Masala Curry
How to marinate the Chicken for Chicken Masala Curry?
Step 1: Take a large bowl. And add the chicken pieces.
Step 2: Nicely wash and clean those chicken pieces.
Step 3: Now, drain the excess water. There shouldn’t be any water left.
Step 4: Add ¾ Tsp Ginger Garlic paste, 1 ½ Tsp turmeric powder, Salt, Garam Masala, Red Chili powder, and chicken masala.
Step 5: Mix them well and keep aside for at least an hour.
How to make Chicken Masala?
Step 1: Take a deep kadhai.
Step 2: Switch on the flame and add 1 ½ Tbsp oil in it.
Step 3: Add Cinnamon, Cloves, Cardamom, and Bay Leaf and saute it for a minute or two.
Step 4: Now add chopped Green Chilies, chopped Onions, ginger-garlic paste and saute it until the onions turn translucent.
Step 5: Now, add salt, red chili powder, garam masala, and tomato puree and stir it well.
Step 6: Keep stirring until the mixture starts leaving oil.
Step 7: Lastly, keep the flame on medium and add the marinated chicken pieces and saute it for 5 to 7 minutes.
Step 8: Bring the flame on low, cover the Kadhai with a lid and let Chicken Masala curry simmer for 5 minutes.
Step 9: Open the lid and check if the chicken is cooked properly. If it is still hard, then let it simmer for some more time.
Step 10: Add little water to make a gravy and simmer again for 4 minutes.
Your chicken Masala is ready. Serve it with parotta or Jeera fried rice.
Tips To Follow
- If you want, you can also keep Chicken masala gravy dry. Just don’t add water at all.
- In the last step, you can add more water to increase its quantity. Just make sure that you don’t add too much.
- To make a gravy, instead of water, you can also add coconut milk or just add grated coconut along with water.
- If you love super spicy food, then you can add black pepper powder too.
- Lastly, while adding tomato puree, you can add some more garam masala and chili powder.
