What’s Cooking India? It’s Aloo Paratha Recipe. Everyone love’s to eat Aloo Paratha. Blazing hot and spicy paratha with mango pickle or sweet/sour curd is cherished by most.
Aloo paratha can be eaten at breakfast and also at your lunch and dinner. It can be also carried in your lunch boxes as well.
Parathas are made with loads of ghee and butter. As this is Punjab’s special dish, it is made by utmost love and affection.
First lots of Ghee is used to roast the paratha, then while serving, Makhan (White Butter) is given in a small bowl or over the paratha itself.
But, it is not compulsory to add ghee or Makhan. You can roast paratha in oil as well. There are also many different types of paratha like Gobhi Paratha, or Dudhi paratha.

Chilli Powder | ½ tsp |
Amchur (dried mango powder) | 2 tsp |
Steps to prepare Aloo Paratha Recipe
How to make Aloo paratha dough?
Step 1: Take a big bowl. Add whole wheat flour, melted ghee and salt into the bowl and mix.
Step 2: Add water as necessary and start kneading the flour. Knead until it becomes a semi-stiff dough.
Step 3: Now sprinkle some ghee in your palm and start kneading the dough again until it becomes soft and supple.
Step 4: Now cover and keep the dough aside.
You can also prepare Dhokla or Garlic fried potatoes.
How to make Aloo paratha stuffing?
Step 1: Add ghee in a non-stick Tawa and let it heat.
Step 2: Once the Ghee is hot enough, add jeera and let them crackle.
Step 3: After you hear the crackling sound, add the chopped onions. Stir-fry the onions for 1-2 minutes.
Step 4: Add chopped green chillies and stir-fry again for 40-50 seconds.
Step 5: Now take the boiled potatoes and mash them well. Add the mashed potatoes and salt (as required) into the pan.
Step 6: Add chilli powder, chopped coriander leaves along with amchur powder and mix well.
(If you do not have amchur powder you could also use lemon juice instead)
Step 7: Cover the Tawa and set it aside.
How to make Aloo Paratha?
Step 1: To prepare an Aloo Paratha, split the dough into 12 equal portions.
Step 2: Now roll a portion of dough into a circle and place the aloo paratha stuffing in the middle of the circle.
Step 3: Bring all the sides of the dough into the centre. and then roll it between your palms to make a smooth round dough.
Step 4: Flatten the dough. Take some flour and start rolling it into a circle.
Step 5: Now take a non-stick pan and grease it with ghee. Place the paratha on top of the pan.
Step 6: When the paratha is slightly cooked, flip the paratha and grease it with a little bit of ghee. Cook until the paratha turns golden brown.
Step 7: Repeat the process with the remaining dough.
Step 8: Serve the aloo paratha with fresh curd/dahi or tomato ketchup.
Tips for a great Aloo Paratha Recipe
- Instead of wheat flour, you can also use all-purpose flour for a crunchy texture.
- Add ghee or oil while kneading the paratha dough. It will make your Paratha soft.
- You can add peas, carrots, or even french beans with the potato stuffing.
- You can also add lemon juice instead of amchur powder. Or you can also skip it.
- Smash the potato very finely. Lumps of potato can break your paratha while rolling.
