What’s Cooking India? It’s veg schezwan fried rice recipe. It is a very popular dish from the Indo Chinese cuisine.

A schezwan fried rice is spicy and hot, with a rich taste of garlic, ginger, soy sauce, red chili sauce tossed in a pan on high flame.

To get the smokey flavor in this recipe, the flame during the whole preparation should be kept on high with continuous tossing and stirring.

Schezwan rice is made by frying the rice in the schezwan chutney along with some other ingredients like carrots, beans, and onions.

You can use the store brought schezwan chutney or you can prepare your own chutney. It is an extension dish to veg fried rice recipe which does not contain schezwan chutney.

You can serve this in your lunch, dinner or even take in your lunch or tiffin box. Manchurian gravy or dry will taste best with this recipe.




Ingredients for Veg Schezwan Rice


 

Ingredients Measurements (1 CUP = 250 ML)
Rice ½ Cup
Vegetables (Diced) (Carrot, Beans, Cabbage, Bell Peppers) 2½ Cup
Salt According to your taste
Oil 2 Tbsp
Spring Onions (Chopped) (Green and White Separated) 1 to 2
Garlic (Chopped) 2 to 3 Cloves
Vinegar ½ Tsp
Red Chili Sauce ½ Tsp
Soy Sauce ½ Tsp
Ajinomoto (Optional) ¼ Tsp
Salt According to your requirement
Ginger (Chopped) ½ Tsp
Schezwan Chutney 2 Tbsp

 

Steps to Make Veg Schezwan Fried Rice Recipe


Step 1: Take a bowl, add ½ Cup of rice and rinse properly for 3 to 4 times. Then soak the rice for 20 to 40 minutes.

Step 2: Drain the water, and bring it to boil in an open pan. Don’t cook the rice completely. Leave 20% uncooked.

Step 3: After the rice is cooked, remove it on a plate and let it cool.

Step 4: In a cutting board, dice all the vegetables and keep them aside.

Step 5: In a kadhai, add 2 Tbsp oil. Add chopped Ginger and Garlic and saute them for a minute or two.

Step 6: Then add all the veggies and spring onions (white part). Saute them till they are half cooked.

Step 7: Now, add ½ Tsp Vinegar, ½ Tsp Red Chili Sauce, and ½ Tsp Soy Sauce and saute it well.

Step 8: Add rice and mix them well sp that the rice grains are coated with the sauces evenly.

Step 9: Add salt, 2 Tbsp Schezwan Chutney, and ¼ Tsp Ajinomoto and toss them well.

Your vegetable schezwan fried rice recipe is ready. Serve in a plate and garnish it with the green part of spring onions.

Tips to Follow


  1. You can increase or decrease the quantity of oil used.
  2. You can add your own choices of veggies.
  3. Instead of chopped Garlic and ginger, you can also add 1 Tsp Ginger Garlic paste.
  4. Adding Ajinomoto is very much optional. It is used just to add a little taste.
  5. Cool the rice completely before starting the recipe.
