What’s Cooking India? Today it is Aloo Kulcha Recipe. Similar like stuffed Kulcha recipe, you can prepare it through maida (all-purpose flour) or with whole wheat flour.

Kulchas are Northern India’s delicacy food. It has many variations like Stuffed Kulcha, Paneer Kulcha recipe.)

It is a delightful stuffed plain flatbread recipe that is very easy to make and very very tasty to eat.

You can also mix both (All-Purpose flour and whole wheat bread) together. But, the texture can change and also the taste will change.

Aloo kulcha recipe is perfect for any tiffin or lunch box. Serve this with loads of butter or ghee.




 Ingredients for Aloo Kulcha


 

Ingredients Measurements (1 CUP=250 ML)
All-Purpose Flour 1 Cup
Atta (Wheat Flour) 1 Cup
Baking Soda ¼ Tsp
Oil According to your requirement
Sugar 1 Tsp
Curd (Yogurt) 2 Tbsp
Water According to Your Need
Sesame Seeds According to Your Need
Salt According to Your Need or 1 Tsp
Potatoes 5 to 6 Medium
Red Chili POwder ¼ Tsp
Green Chilies 3
Garam Masala ¼ Tsp
Dry Mango Powder (Amchur Powder) ½ Tsp
Coriander Leaves 2 Tbsp

Steps to prepare Aloo Kulcha Recipe


How to make the Stuffing?

Step 1: Boil 5 to 6 Medium sized potatoes after rinsing it properly.

Step 2: Remove them in a large plate and also remove their skin.

Step 3: Smash them with the help of a fork or spatula.

Step 4: Now, add ¼ Tsp Red Chili powder and ½ Tsp aamchur Powder and mix well.

Step 5: Now, add chopped green chilies, 2 Tbsp coriander Leaves (chopped), and ½ Tsp Garam Masala powder.

Step 6: Using a spatula, mix all of them properly. Remember, there should not contain any potato lumps.

How to Make the Dough for Potato stuffed Kulcha?

Step 1: Take a large mixing bowl.

Step 2: Add 1 cup of all-purpose flour, 1 cup of whole wheat flour, 1 tsp of sugar, 1 tsp of salt, 3 tsp of oil, and 2 tbsp of yogurt or dahi.

Step 3: With the help of a spatula, mix them well.

Step 4: Add 2 to 3 cups of water parts by parts. You can also use your hands to mix them. This will be a better option.

Step 5: Mix them until it begins to knead.

Step 6: Make a smooth dough, cover it and keep aside for 2 to 3 hours.




How to make Aloo Stuffed Kulcha?

Step 1: After 2 hours, knead the dough once again.

Step 2: Now, divide the dough into small equal golf ball-sized portions.

Step 3: Roll them until smooth using your palms.

Step 4: Now, take 1 dough portion and roll it using a rolling pin. Don’t roll it till thin.

Step 5: Take 2 Tbsp of aloo stuffing and place it in the center of the rolled dough.

Step 6: Bring all the edges of the dough in the center and join them.

Step 7: Roll the dough once again in between your palms to make it smooth.

Step 8: Using the rolling pin, add little flour and roll the stuffed dough. It should be thick.

You can also try paneer Butter Masala or Kerala parotta recipe.

Final Steps to Fry the Stuffed Kulcha Recipe

Step 1: Take a frying pan. Heat it on a high flame.

Step 2: Add little oil in the center, and place the kulcha.

Step 3: Cook it in low flame until slightly brown.

Step 4: Now, flip it and cook another side in the same way.

Step 5: Gently press the kulcha to ensure it is cooked inside out.

Your Kulcha is ready to be served. Serve it hot with Paneer Butter or just with Butter.

Tips that you must Follow


  1. While roasting the kulcha on Tawa, instead of oil, you can also use ghee or butter.
  2. Substitute of baking soda is ¼ Tsp baking powder
  3. Boil the potatoes with its skin. This will help to keep your potatoes dry after it is boiled.
  4. You can also skip Dry mango powder or can use Chat masala.
  5. Amchur powder is for little sour tangy taste. You can add any which tastes like it.
