Sooji Idli Recipe: How to Make Easy Rava Idli Recipe?

Sooji idli recipe is an instant version of homemade soft idli which takes at least 1 day to prepare. You can add many variations in this rava idli recipe. Either add some finely chopped veggies of your own choice or just make plain suji idli without adding any veggies or other ingredients.

Instant rava idli is originally a specialty of Karnataka state, and now you can find it across the whole India. A rava idli is served with coconut chutney and sambhar, but if you are making a sooji idli recipe with chopped veggies then you can have it without any sides.

Rava idli is one of the most common recipes at my house. Whenever my mom is out of ideas for breakfast, she thinks of some quick breakfast recipes that require fewer ingredients and also get prepared within minutes. Some of these quick breakfast recipes are rava dosa, khaman dhokla, rava idli, besan bread toast, etc, etc.

In this recipe, I have used ENO fruit salt as a leavening agent, but if it is not easily accessible for you, then you can use  ¼ tsp of baking soda. I use ENO Fruit Salt because it doesn’t leave any weird taste that baking soda or baking powder leaves in your recipe.

Sooji Idli Recipe | Rava Idli Homemade

To make this sooji idli, you would need,

  • Rava Semolina / Sooji
  • Ghee
  • Chana Dal
  • Cumin Seeds
  • Mustard seeds
  • Ginger Paste
  • Green Chilies
  • Curry Leaves
  • Coriander leaves
  • Fresh Curd
  • Water
  • ENO (Fruit Salt – Regular)
  • Oil
  • Salt

– Take a small pan. Heat the ghee on a medium flame. Add cumin seeds, mustard seeds, chana dal. Saute them until the dal turns light brown in color.

– Now add the 2 finely chopped green chilies, grated ginger along with curry leaves. Saute them for another 20 to 30 seconds.

– Now quickly add the Rava into the pan, ring the flame on low, saute the mixture continuously for a minute. Now turn off the gas. Set the pan aside and let the rava cool down.

– Take a mixing bowl, add chopped coriander leaves, salt, curd, and of water into the bowl. Mix everything well, until the batter has a uniform consistency. Cover it and set it aside for 20 to 30 minutes.

– In the meanwhile, grease the idli molds and keep aside for later use. After 20 minutes, check the batter consistency of the rava idli batter and add some more water if required. The batter should be thick and smooth just like any normal idli batter.

– Add a glassful of water into the Idli steamer and let it boil. As soon as the water starts to boil, add 1 teaspoon of ENO into the batter and gently mix it properly. Avoid over mixing the batter.

– Immediately transfer the batter into the molds. Place the moulds in the hot idli steamer and let it steam for 12-15 minutes on high flame.

– Remove the molds from the steamer and allow the idli to cool down for 3 to 4 minutes. Demold the idli with the help of a spoon and let it cool.

– Serve this delicious South Indian delicacy sooji idli recipe with coconut chutney and sambhar.

Ingredients
  

  • 1 cup Rava Semolina / Sooji
  • 2 tbsp Ghee
  • ½ tbsp Chana Dal
  • ¼ tsp Cumin Seeds
  • ½ tsp Mustard seeds
  • ¾ tsp Ginger Paste
  • 2 Green Chilies finelly chopped
  • 8 Curry Leaves
  • 2 tbsp Coriander leaves finely chopped
  • ¾ cup Fresh Curd
  • ½ cup Water
  • 1 tsp ENO (Fruit Salt – Regular)
  • 1 tsp Oil
  • Salt as per need

Instructions
 

  • Take a small pan. Heat 2 tablespoons of ghee on a medium flame. Add ¼ teaspoon cumin seeds, ½ teaspoon mustard seeds, ½ tablespoon chana dal. Saute them until the dal turns light brown in color.
  • Now add the 2 finely chopped green chilies, ¾ teaspoon grated ginger along with 8 curry leaves. Saute them for another 20 to 30 seconds.
  • Now quickly add 1 cup Rava into the pan, ring the flame on low, saute the mixture continuously for a minute.
  • Now turn off the gas. Set the pan aside and let the rava cool down.
  • Take a mixing bowl, add 2-3 tablespoons of chopped coriander leaves, salt, ¾ cup curd, and ½ cup of water into the bowl.
  • Mix everything well, until the batter has a uniform consistency. Cover it and set it aside for 20 to 30 minutes.
  • In the meanwhile, grease the idli molds and keep aside for later use.
  • After 20 minutes, check the batter consistency of the rava idli batter and add ¼ to ½ cup of water if required. The batter should be thick and smooth just like any normal idli batter.
  • Add a glassful of water into the Idli steamer and let it boil.

Notes

  • You can also skip dry roasting the rava if you and keep them soaked in water for 10 min before starting the recipe.
  • Keep the flame on low while dry roasting the rava.
  • Use the right amount of curd. As it helps in making the Idli soft and fluffy.
  • You can skip all the ingredients except Rava, Curd, and ENO to make a simple plain Rava Idli.
