It is a pure veg recipe that is made with plum, dry fruits, and whole wheat flour. So this is a healthy recipe too.

To bake this cake, you will need 8 to 10 inches baking pan of any shape. You can serve this plum cake before or after dinner, lunch or for your snacks with Hot tea or coffee.

Choose any choice of your favorite dry fruits for this soft and spongy for this eggless plum cake recipe. You can also try chocolate cake if you don’t like plum cake.

This plum cake recipe is made without any eggs or alcohol.

Ingredients

  • Whole Wheat Flour - ½ Cup (1 Cup = 250 ML)
  • All-Purpose Flour - 1 Cup
  • Vanilla Extract - 1 Tsp
  • Cashew Nuts - ½ Cup
  • Plums (Chopped) - 4 to 6
  • Cinnamon Powder - ½ Tsp
  • Milk - ½ Cup
  • Nutmeg Powder - ¼ Pinch
  • Baking Soda - ½ Tsp
  • Apple Cider Vinegar - 2 Tbsp
  • Baking Powder - 1 Tsp
  • Melted Butter - ⅔ Cup (167 ML)
  • Powdered Sugar - 1 Cup

Instructions

Steps to make Eggless Plum Cake Recipe

  1. Step 1: First grease your baking pan with oil or butter.
  2. Step 2: Preheat your microwave to 180 degrees Celsius.
  3. Step 3: Take a large bowl, sieve all the dry ingredients like the All-Purpose flour, nutmeg powder, cinnamon powder, and baking powder.
  4. Step 4: Now, add ⅔ cup melted butter to the flour and mix well.
  5. Step 5: After mixing them properly, add the powdered sugar, and mix them properly. 
  6. Step 6: Now, add finely chopped plums and cashew nuts to the mixture. Mix them properly together.
  7. Step 7: In a separate bowl, add ½ cup milk and 2 tbsp Apple Cider Vinegar. Don’t mix them at all or the milk would then start curdling. Add ½ Tsp Baking soda and stir it properly. This mixture will now froth and bubble.
  8. Step 8: Add this mixture quickly to the batter along with the vanilla essence. Mix them quickly.
  9. Step 9: Now, pour this batter in the greased baking pan and bake it in 180-degree celsius for 30 to 45 minutes.
  10. Step 10: When the cake is cooked, the top side will be browned in color and it will have a natural glaze.

Your eggless plum cake is ready to be served. 

Notes

  • You can use soy milk instead of normal milk.
  • Use more dry fruits like dates, raisins, almonds, etc.
  • You can adjust the powdered sugar according to your sweetness.
  • You can also use white Vinegar instead of Apple Cider Vinegar.
  • You can also add tutti frutti with the dry fruits.
