What’s Cooking India? It is Set dosa Recipe or which is also called as sponge dosa. It is a very popular breakfast option in the State of Bangalore and other parts of Karnataka.
It comes in the category of fast food, or tiffin service. This dosa can also be prepared with less oil.
This dosa is served in a set of 2 or 3 so the name. Set dosa is usually served with Coconut Chutney or Vegetable saagu.

Steps for making Set Dosa/Sponge Dosa Recipe
How to make Set Dosa Batter?
Step 1: Take a large bowl, add 2 Cups rice, and wash it properly for 2 to 3 times then add ample of water and let it soak overnight or for at least 5 hours.
Step 2: Then take 1 tsp fenugreek seeds, and ½ cup Urad dal in a different bowl, rinse it properly for 2 to 3 time, add ample of water and let it soak overnight or for at least 5 hours.
Step 3: In the morning, before grinding the dosa batter, take 1 Cup Beaten rice or Poha and wash it properly for 2 to 3 times. Remove the water and keep it aside.
Step 4: Now, drain the water from both the bowl containing rice and dal.
Step 5: In a grinder jar, add the urad dal along with Methi seeds, Poha, salt, and water, grind all of them and make a smooth paste. Add water while grinding to make it smooth but thick paste.
Step 6: Transfer the batter of dal in a large bowl.
Step 7: Similarly, take rice in a grinding jar and grind it by adding little little water and make a smooth paste.
Step 8: Add this with the urad dal batter and mix well. Now, keep the batter aside for fermentation process. Cover the bowl with a lid and keep it aside for 7 to 8 hours.
How to make Set Dosa/Sponge Dosa Recipe
After fermentation, you will see that the batter has doubled. You might also see that there are many bubbles formed in the batter.
Step 1: Mix the batter properly before you start to make Set Dosa.
Step 2: Take a frying pan, and turn on the heat.
Step 3: Add a few drops of oil or ghee in the frying pan. Spread it evenly using a ladle or half cut onion.
Step 4: Using the same ladle, pour 1 full ladle of batter in the center of the pan.
Step 5: Do not spread it like other normal or Masala Dosa. Sponge dosa should be thick, unlike the other normal dosas.
Step 6: Cook it with the lid closed until slight brown from one side.
Step 7: Now, Flip the set dosa and cook the other side for 2 minutes on low flame.
Step 8: Now, remove it in a plate and serve hot. Prepare all the dosas in a similar way.
Set Dosa tastes best when served with coconut chutney.
Tips for a perfect Sponge Dosa
- If your dosa doesn’t turn brown in color, then you can add little sugar.
- For a better taste, add ghee in place of oil.
- You can also add baking soda or normal fruit salt to make your dosas soft.
- After flipping, cook the dosa in low flame to make it a bit crispy.
