What’s Cooking India? It’s Kacchi Dabeli Recipe. It is a Gujarati special recipe originating from the State Gujarat.

In Gujarati language, Dabeli means pressed. In 1960s, Keshavji Gabha Chudasama urf Kesha Malam invented it.

He was a resident of Mandvi, Kutch which is in Gujarat State. So from here, it got its name, Kutchi Dabeli.

Keshav’s next generations are operating his shop now in Mandvi. Dabeli dish is prepared by potato stuffing and pav.

The stuffing includes a blend of some Indian spices (Dabeli masala) and mashed potatoes. This filling is then stuffed between a pav, with garlic chutney, sweet tamarind chutney, onions, and roasted peanuts.

This dish is not popular only in the Gujarat state but also can be found in Maharashtra state. These dabelis are sold in almost every corner of the streets in Gujarat as well as in Maharashtra state.

Before serving, dabeli is toasted in butter to make both sides crunchy.




Ingredients for Kutchi Dabeli


 

Ingredients Measurements (1 CUP = 250 ML)
Buns or Pav 4 to 5
Coriander Leaves (Chopped) ½ Cup
Peanuts (Roasted) ½ Cup
Nylon Sev ½ Cup
Garlic Chutney
Garlic ½ Cup
Red Chili 2
Lemon Juice ½ Tsp
Salt According to your taste
Dabeli Masala
Coriander seeds 1 Tsp
Dry Red Chili 1
Cinnamon Stick ½ Inch
Jeera (Cumin Seeds) ½ Tsp
Lavang (Cloves) 3
Dabeli Filling
Onion (Chopped) 1 Small Size
Potatoes (Peeled and Mashed) 3 Medium
Dabeli Masala 2 Tsp
Cumin Seeds ½ Tsp
Asafoetida (Hing) (Optional) A Pinch
Dates Tamarind Chutney 2 Tbsp
Coriander Leaves (Chopped) ¼ Cup
Pomegranate Seeds ¼ Cup
Oil 2 Tbsp
Salt According to your taste
Water 2 Tbsp

 

Steps to make Kacchi Dabeli Recipe

Note: Soak ½ Cup garlic and 2 Red chilies in separate vessels for 30 minutes.
 

How to prepare Dabeli Masala?

Step 1: Take a large kadhai and bring it to heat on medium flame.

Step 2: Dry roast ½ Tsp cumin seeds, 1 red chili, ½ inch cinnamon stick, 2 to 3 cloves, and coriander seeds together.

Step 3: Now, add these ingredients in a grinder and grind them to a fine powder.

Step 4: Keep it aside.

Steps to prepare the garlic chutney

Step 1: Using a grinder, grind the soaked garlic, and red chilies.

Step 2: Add lemon juice and salt according to your taste.

Step 3: add water if necessary and keep it aside.

 

How to prepare the potato filling

Step 1: Boil 3 medium-sized potatoes using a pressure cooker. After it is cooked, peel it and keep it aside and let them cool.

Step 2: Take a kadhai, add 2 Tbsp oil and let it heat on medium flame.

Step 3: Now, add ½ Tsp Cumin seeds, saute them until they start crackling.

Step 4: Add 1 chopped onions, a pinch of hing and saute it until the onions turn soft.

Step 5: Then, add 2 Tbsp dates tamarind Chutney to it and saute it.

Step 6: Now, mash the potatoes and add them to the mixture.

Step 7: Add the dabeli masala powder and salt and mix them well.

Step 8: Keep stirring the mixture so that all the ingredients mix well. Keep the filling not too thin neither too thick. Adjust it by adding water or by cooking it for some more minutes.

Step 9: After it is done, spread it on a plate, sprinkle some pomegranate seeds, chopped coriander leaves and keep it aside.

 

Final steps to make the dabeli dish

Step 1: Take 1 bun or pav. Apply some garlic chutney on one side and sweet tamarind chutney on the other.

Step 2: Using a small spoon, add 1 spoon potato filling in it.

Step 3: Then add some chopped onions, pomegranate seeds, and roasted peanuts.

Step 4: Now, add another spoon of potato filling. You can add 1 spoon or ½ spoon of the filling in this step.

Step 5: Stick some nylon sev to the dabeli.

Step 6: Now, heat a Tawa, add 1 Tsp butter or ghee whichever you prefer, toast the potato-filled dabeli until both the sides become crunchy. It tastes better when crunchy.

Your Kacchi Dabeli Recipe is ready to be served. Serve the dabeli recipe along with chopped onions and roasted peanuts. Serve it warm.

Tips to Follow


 

  1. You can use coriander powder instead of coriander seeds while making the dabeli masala.
  2. Add some red chili powder if you love spicy.
  3. You can also buy readymade dabeli masala which can be found in any grocery store.
  4. Adding masala peanuts will also work instead of plain peanuts.
  5. You can also add pav bhaji masala instead of dabeli masala.
