What’s Cooking India? It’s Idli Podi Recipe. It is a dry powder which is made by red chilies and lentils. It is also called as Idli Milagai Podi.

One another variety of Milagai Idli podi is called Gun Powder. This is spicier in taste and also includes garlic.

In Tamil language, Milagai means red chilies, & Podi means powder. While serving idli podi, it is mixed with some oil or ghee and then served with idli or dosa.

Idli podi is a very addictive recipe because of its taste and crunchiness. Milagai podi can also be accompanied with Sambhar and Coconut chutney.




Ingredients for Idli Podi Recipe

Ingredients Measurements (1 cup = 250 ml)
Urad Dal (Split Black Gram) ¼ Cup
Chana Dal (Bengal Gram) ¼ Cup
Sesame Seeds ¼ Cup
Salt According to your need
Red Chillies (Dried) 4 to 6
Cumin Seeds (Jeera) 1 Tbsp
Garlic 1 to 2 Cloves
Dried Coconut ¼ Cup
Flax Seeds (Optional) 2 Tsp
Curry Leaves 2 to 4
Jaggery According to your need
Tamarind According to your need

Steps for Idli Podi Recipe

How to Prepare Idli Podi?

Step 1: At first, wash the curry leaves and let it dry.

Step 2: Then take a large pan and start roasting urad dal and chana dal until their color changes to slight gold.

Step 3: Now keep them aside in a plate and let them cool at room temperature.

Step 4: Now, in the same pan, roast the red chilies until they turn crispy.

Step 5: Remove them on a plate and let them cool at room temperature.

Step 6: Now, add 2 to 4 curry leaves and roast them until crispy.

Step 7: Keep them aside too in a plate and let them cool.

Step 8: Take 1 tbsp cumin seeds and ¼ cup sesame seeds and roast them until they become slightly darker in color.

Step 9: Now add 2 to 3 cloves of garlic and ¼ cup dried coconut and toss them together for a minute or 2.

Step 10: Keep them aside on a plate to cool.

How to Make Idli Podi?

Step 1: Take a blender jar, first blend the red chilies and dals.

Step 2: Keep them aside in a large bowl.

Step 3: Now in the same blender jar, take sesame seeds, curry leaves, cumin seeds, garlic cloves, and coconut and blend it to make a powder.

Step 4: Now, add salt and blend it again.

Step 5: Remove the powder from the blender jar and mix it with the powder that is kept in the bowl.

Your Idli Podi is ready. Keep it in an airtight container

Tips for a Perfect Idli Podi Recipe

  1. You can also add peanuts. Dry roast the peanuts and then blend it with other ingredients.
  2. You can add a bit of Jaggery if you like sweet or a bit of Tamarind if you like the sour taste.
  3. If you want, you can fry the chilis and curry leaves in hot oil for a better taste.
  4. You can also use flax seeds in place of peanuts to make it more healthy.
  5. Use less red chilies if you don’t love the spicy taste.
