Tips for a perfect crispy Medu Vada

  1. Whisking is done to make the batter smooth.
  2. Keep the batter aside for half to 1 hour to ferment before frying.
  3. Side the vada in the oil very carefully as the oil can splash on your hand.
  4. Don’t make the batter thin. Then you won’t be able to give a proper shape to your vadas and also it will soak more oil.
  5. The hole in the vada is usually made so it can be fried properly and evenly.
