What’s Cooking India? This time its crispy Medu Vada recipe. I have seen many people in the early morning search for ‘Anna’ means brother in South Indian Language. In India, we call every south Indian man who sells Idli, or dosa or any south Indian dishes as Anna.
They are pretty famous here. In the early morning, they come in their cycle with tons of idlis, Medu Vada, Dal Vada, Dosa, coconut chutney, Tomato Chutney, and Sambhar. I myself prefer eating medu vada from them in the early morning.
One day I thought, why shouldn’t I try myself making Medu Vada?? It will be healthy for me too. Healthy because of black lentils. It is a rich source of protein and vitamin B. It is easy to make and doesn’t require many ingredients. So let’s start our Medu Vada recipe.
Ingredients for Medu vada
|Urad Dal||2 cup|
|Rice Flour||2 tbsp|
|Green Chillies (Finely Chopped)||3|
|Grated Ginger||1 tbsp|
|Cumin Seeds (Jeera)||1 tbsp|
|Black Pepper Powder||1 tsp|
|Curry Leaves||5 to 6|
|Salt||According to your taste.|
Method to prepare Medu Vada Recipe
Step 1: Wash the urad dal 3 to 4 times. Urad dal contains a lot of powder and impurities that can be removed by washing it for minimum 3 times.
Step 2: Now add 2 glass of water, and keep it to rest for a minimum of 8 hours. To save time, you can keep it overnight.
Step 3: After 8 hours, strain the water and then again wash the urad dal once.
Step 4: Now grind a small amount of it using mixture or grinder to make a paste. Repeat it until all the dal is grinded. Don’t use any amount of water while grinding it. If it is too dry, then you can add 1 tbsp of water into it.
Step 5: Now, whisk the urad dal in a large bowl.
Step 6: Add 2 tbsp rice flour, Grated Ginger 1 tbsp, 3 finely chopped green chillies, Cumin seeds 1 tbsp.
Step 7: Mix it well.
Step 8: Add 1 tsp black pepper powder, salt, and 5 to 6 curry leaves. Tear the curry leaves into pieces and then add.
Step 9: Again, mix the whole batter thoroughly.
Step 10: Add 2 tbsp of hot oil in the batter and mix the batter well.
Your Medu Vada batter is ready to be fried.
Step 11: Take a pan to deep fry the vada. Pour oil, switch on the flame and let it come to heat.
Step 12: Now, apply some water in both your palms. Then take 1 tbsp of batter in your palm and juggle it in between both your hands. The batter won’t stick to your palms, as you have applied water in your palms. Juggle it so that the lump of batter that you have taken gets a soft texture from outside.
Step 13: Now, make a hole in the center of the Medu Vada and dip it in the oil in the frying pan.
Step 14: Fry the vadas in low flame. This is done to make the vada super crisp and to cook it properly.
Now, your Medu Vada is ready to be served.
Tips for a perfect crispy Medu Vada
- Whisking is done to make the batter smooth.
- Keep the batter aside for half to 1 hour to ferment before frying.
- Side the vada in the oil very carefully as the oil can splash on your hand.
- Don’t make the batter thin. Then you won’t be able to give a proper shape to your vadas and also it will soak more oil.
- The hole in the vada is usually made so it can be fried properly and evenly.
