Whats Cooking India? It’s chicken schezwan rice recipe. This chicken fried rice recipe is simple and easy to cook. You can use freshly cooked rice or yesterday’s leftover rice.
This is an Indo Chinese dish that can be accompanied by Chicken Crispy or Hot and Sour soup.
You can increase or decrease the quantity of the recipe by increasing the measurements proportionately.
Always use tender chicken pieces. To make it tender, soak the chicken pieces in buttermilk for at least 45 minutes. Drain the pieces completely and then use it in your schezwan chicken fried rice recipe.
Schezwan fried rice is also used for triple schezwan fried rice. Triple schezwan fried rice is a complete meal for 1 or 2 people. Its single-serve can serve 2 people at once.
Triple rice is a combination of rice, Hakka noodles, and Manchurian gravy.
|Ingredients||Measurements (1 CUP = 250 ML)|
|Boneless Chicken||150 Grams|
|Garlic (Minced)||½ Tsp|
|Ginger (Minced)||½ Tsp|
|Mix Vegetables (Carrots, Beans, Cabbage)||½ Cup|
|Onions (Diced)||½ Cup|
|Soy Sauce||2 Tsp|
|Red Chili Sauce||2 Tsp|
|Ajinomoto (Optional)||1 Tsp|
|Sczehwan Chutney||2 Tbsp|
|Spring Onions||¼ Cup|
Step 1: Take ½ Cup of rice in a bowl. Rinse well for 2 to 3 times and then soak in water for 30 minutes.
Step 2: After 30 minutes, Boil the rice till 80%. It should be left 20% uncooked as it will get cooked while preparing Chicken Schezwan Fried Rice.
Step 3: After the rice is cooked, remove it on a flat plate and let it cool.
Step 4: Also boil 150 grams of chicken in the same cooker. After it is cooked, remove and let it cool. Meanwhile, take a Kadhai.

Step 5: Add 2 Tbsp oil, keeping the flame on medium, add ½ Tsp ginger, garlic and saute it for 3 minutes.
Step 6: Now, add ½ Cup diced onions and saute it till it turns translucent.
Step 7: Add the veggies and saute it again. Fry the veggies for 5 minutes.
Step 8: Now, add Soy Sauce, Red Chili Sauce, Vinegar, salt, and chicken pieces.
Step 9: Mix them well, and then add cooked rice.
Step 10: Saute them till all the sauces, veggies, and chicken pieces are mixed properly with the rice.
Step 11: Lastly, add Ajinomoto and Schezwan Chutney. Mix them well. Cook for 5 minutes and then switch off the flame.
Top it with diced spring onions. While serving, add a half fried egg or with some extra pieces of chicken on the top. Your chicken schezwan fried rice recipe is ready.
