Butter Chicken Recipe | Restaurant Style Butter Chicken

What’s Cooking India? This time it is Butter Chicken. Butter is a staple food of India and was found out by three Indians. 1) Thakur Dass, 2) Kundan Lal Gujral, and 3) Kundan Lal Jaggi. All of them were founders of Moti Mahal Restaurant in Delhi.

This dish was made by chance by mixing some leftover Chicken in Butter rich Tomato Gravy. This is not only famous in India but also globally. In New Zealand and Australia, it is also used as a Pie filling.

Butter Chicken is increasing its popularity day by day. No doubt, that everyone will love it because it is made up of butter. It enhances the taste of it. When I made this, I thought it won’t taste that great like that we get in Restaurants.

But, I was wrong. It tasted much greater than I ate at the Restaurant. Now, after that day, I don’t order butter Chicken from outside, instead, I cook it personally.

Ingredients to be Used for Butter Chicken

For Chicken Marination Process
Chicken Breast½ kb
Cumin Seeds (Jeera)1 tsp
Kashmiri Lal Mirch Powder1 tsp
Olive Oil1 tbsp
Ginger Garlic Paste1 tbsp
Dried Coriander1 tsp
Full Fat Yoghurt¼ Cup
For Butter Chicken sauce
Unsalted Butter2 tbsp
Dried Coriander2 tbsp
Ginger Garlic Paste1 tbsp
Diced Tomato500 grams
Cashews9 to 10
Almond9 to 10
Sugar1 tsp
Kashmiri Lal Mirch (Grounded)½ tsp
Garam Masala (Grounded)1 ½ tsp
Kasuri Methi½ tbsp
Salt½ tsp
Heavy Cream¼ Cup
Water1 Cup

Steps to Prepare Butter Chicken Recipe.

1) Steps to Marinate the Chicken:

Step 1: Take a big bowl. Add the chopped chicken with the rest of the marinade ingredients together. Mix the ingredients together with your hands.

Step 2: Cover the bowl with plastic wrap and refrigerate. Allow the marinated chicken to set for about 4-5 hours (overnight preferably).

2) Steps to fry the Chicken:

Step 1: Place a frying pan on the stove. Let it heat over medium-high flame. When mildly heated, sprinkle a teaspoon of oil onto the pan.

Step 2: Remove the marinated chicken from the refrigerator beforehand. Add adequate pieces of chicken to the pan (do not overcrowd the pan) and let them grill for about 4-5 minutes on each side until the clear juice runs out of the chicken.

Step 3: Once fully cooked, transfer the chicken into a separate plate. Cover it and set it aside.


3) Final steps to make Butter Chicken:

Step 1: Soak the almonds and cashews in water for about 1-2 hours before preparing the rest of the recipe.

Step 2: Take a skillet, place it on a medium-low flame. Add 1 ½ tablespoon of butter in it. As soon as the butter melts, add the ginger garlic paste into it followed by 1 tsp sugar. Sauté it for a minute or two.

Step 3: Now add the tomatoes and cook it for 10-12 minutes on a medium-high flame, until all the extra liquid is cooked off. The sauce should now form a paste-like consistency.

Step 4: Now add garam masala, Kashmiri Lal Mirch, coriander and salt into the paste. Let it cook on a medium flame for about 3-4 minutes. Stir the mixture well. Now turn off the flame.

Step 5: Take a blender and transfer the puree. Also, add the soaked almonds and cashews into the blender. Now blend it into a smooth paste.

Step 6: Place a cooking pan over a medium flame. Now transfer the blended paste into the pan and add some water. Stir it continuously to make it into a smooth sauce.

Step 7: As soon as the sauce starts to boil, add the grilled chicken followed by heavy cream. Stir it well. Now cover the lid and let it simmer for a good 4-5 minutes.

Step 8: Now switch off the gas and add the remaining ½ tablespoon butter and Kasuri methi into your butter chicken. Stir it well and cover it again. Let it sit for another 8-10 minutes.

Tips for a perfect Butter Chicken Recipe

  1. You can also use coconut milk instead of heavy cream. It is equally a dairy free and creamy substitute.
  2. Don’t throw the butter. It gives glossy and delicious flavour to it.
  3. You can also use fried chicken instead of marinated chicken. Fry the chickens in a shallow pan with less oil covered with Indian spices (Garam Masala, Cumin (jeera) Powder, Red Chilli powder, Chana Masala Powder.

Now your delicious homemade butter chicken is ready to be savored. Serve it along with roti, naan or steamed basmati rice!
